Villa Baulieu White 2013

Soils and Grape Varieties
This wine is a blend of Sauvignon Blanc, chosen for its good, reliable behaviour and Rolle, chosen for its Mediterranean exuberance, grown mainly in our limestone soils.  The vineyards’ 430m elevation, north-east exposure and cool soils give this wine lovely acidity and freshness.

Harvesting
Harvesting is carried out by hand and its date is determined by tasting the grapes. Our priority is to preserve the freshness of the fruit. Only very ripe, firm clusters are selected, picked and carefully placed in small 10 kg crates to prevent the grapes from bursting and oxidizing.

Vinification
After a rigourous selection of the grapes in the vineyards and again in the winery, the white grapes are pressed with their stalks in order to add a touch more aromatic complexity. The juice is lightly clarified, then vinified in large wooden vessels (40hl vats), in which the wine will remain for 6-8 months

Tasting Notes
This more sunny vintage has helped the varietal to really express itself in its unique terroir. Very complex and elegant, the wine releases aromas of citrus, lemon and fennel, along with some exotic and mineral overtones,  Finesse and complexity best describe this wine on the nose. Freshness, dynamism and breadth on the palate are the keys to an exceptional wine. The understated oak gives way to a slightly saline minerality. There is a nice bitter hint on the finish, derived from the polyphenols.

Soils and Grape Varietes
The Berengere Red wine vineyards face north-east, at an elevation of 430 metres, and have volcanic and marly clay-limestone soils. This wine is a blend of predominantly Syrah with Cabernet Sauvignon.
 
Harvesting
The date of harvesting is determined by a manual and tasting analysis of the grape. The harvesting of the 2013 took place in October. Our priority is to preserve the freshness of the fruit. Only very ripe, firm clusters are selected, picked and carefully placed in small 10 kg crates to prevent the grapes from bursting and oxidizing.
 
Vinification
After a rigourous selection of the grapes in the vineyards and again in the winery, the grapes are macerated and fermented in concrete tanks for about 25 days.  About ten or so « pigeage » (punching of the cap) operations are carried out to ensure gentle extraction. The wine is then aged separately for 10-12 months, either in barrels or vats
 
Tasting Notes
A very bright wine, bursting with ripe red fruit, fresh peppers, juniper berries and chocolate chips. Smooth, nice trim structure and medium-body on the palate, with a final burst of energy on the finish giving it great charm.

Terroirs and grape varieties
The provenance is mainly from our limestone chalky soils with Sauvignon Blanc for its certainty and Vermentino for its Mediterranean exuberance making up the blend.

Harvest
Manual harvest, as for most of the vineyard labour, and we decide on the date after tasting the grapes.
Our priority is preserving the freshness of the fruit. Transporting the grapes to the cellar in small 10 kg baskets prevents berries from bursting and the ensuing oxidation.
 
Vinifying
Following rigorous sorting both in the vineyard and at the cellar, the grapes are crushed directly without removing the stalks. The juice is lightly clarified and then vinified and aged in large oak vats where the wine remains for 6 to 8 months based on tasting, before bottling and release onto the market.
 
Tasting notes
A bright, brilliant colour, this wine has tinges of pale green.
The nose is characteristically Mediterranean, and after quick aeration exudes aromas of ginger, sour fruits such as citrus and white fruits like peaches.
On the palate it is rich and deep and admirably balanced with a beautiful texture. The oak is very well integrated, leaving the varietal character to express itself.
The mineral energy of this wine gives the distinct impression of its potential to evolve slowly in the bottle.

Terroirs and Cultivars
This wine is mainly sourced from our white chalky marl soils and from a few spots of basalt soil. Production of our red wines is from a majority of Mediterranean grape varieties: Old Grenache, Shiraz and Cabernet Sauvignon compose the blend.

Harvests
Manually picked at phenolic ripeness, the grapes are transported to the cellar in 10kg baskets.

Vinification
Following rigorous sorting, the grapes are destemmed and put into the tanks. Regular tasting determines the vinifying steps to be taken daily. Pumping over enables us to do gentle extraction of the desirable components in the wine. After 25 days of maceration the wine is transferred to French oak barrels where the malolactic fermentation will take place. It will remain in the barrels for 10 to 12 months. Harmony, finesse and elegance are always qualities we strive for in our wines.

Tasting Notes
Tasting note: nose dominated by aromas of red berries and kirsch with some hints of caramel, chocolate and praline, mingled with some discreet toasty notes due to the barrel aging.
The palate is expansive and concentrated, offering a soft very spicy texture enveloped in really ripe, tight tannins.
Well integrated oak.

Cuvee Bérengère White 2013

Soils and Grape Varieties
Growing on the domaine’s volcanic vein covered by a clay-limestone soil, the Rolle and Semillon give this wine a beautiful expression. The chalk, like a sponge, soaks up the winter moisture and restores it in the summer. This terroir, combined with the northern exposure, ensures that the wine is not too high in alcohol.

Harvesting is carried out by hand and its date is determined by tasting the grapes. Our priority is to preserve the freshness of the fruit. Only very ripe, firm clusters are selected, picked and carefully placed in small 10 kg crates to prevent the grapes from bursting and oxidizing.
 
Vinification
After a rigourous selection of the grapes in the vineyards and again in the winery, the white grapes are pressed with their stalks in order to add a touch more aromatic complexity. They are vinified in French oak barrels which have undergone a light toasting and the wine is then aged for eight months in these same barrels
 
Tasting Notes
Juicy, white-fleshed fruit combine with spices: curry, cumin and fennel. A trace of light caramel indicates the fermentation in oak. The wine show a big, sunny, delicious character on entry to the palate, followed by the smoothness created by its beautiful phenolic texture. The finish vacillates between toasted, spicy and salty bitter notes.

This wine comes from volcanic soils characterized by the presence of basalt and marl here and there. Vermentino and Semillon are the grape varieties in its composition.

Vinifying

Tasting notes
A clear brilliant wine of a pale yellow colour. The nose is very complex with dominant aromas of lemongrass, wild fennel and yellow fruits such as apricots. This display of aromatics is held together beautifully by a well mastered use of oak. On the palate the wine is energetic soft and full bodied, very harmonious with a hint of chilli and saline notes.

Terroirs and Grape Varieties
Coming from volcanic soils, this wine is characterised by the presence of some
basalt. Shiraz and Cabernet Sauvignon make up this wine.

Harvest
This is manual and determined by analysing the maturity of the grapes by taste.
Fruit freshness is our priority, hence the transporting of grapes in small 10kg baskets
which ensures that grapes do not split and avoids oxidation.

Vinification
After rigorous selection in the vineyard and sorting at the cellar, the grapes are
vinified and macerated in stainless steel tanks for 25 days depending on tasting
results. The wine is then aged for 10 to 12 months in barrels.

Tasting Notes
The wine offers an intense, deep and brilliant colour. The nose exudes aromas of
red berries, Kirsch and a hint of chocolaty nuttiness and praline. On the palate it is
streamlined and energetic with quite a good initial mouth feel. It goes on to reveal
spicy aromas transported by the presence of silky refined tannins. This is the epitome
of a wine for cellaring that has been created with full respect and is atribute to its
terroir.
